SPATCH, the best thing to happen to chickens since feathers, is now open on Edinburgh’s Royal Mile. Barn reared Scottish chickens are SPATCHed and then Charcoal Fired on our custom-made rotisserie in the centre of the restaurant – adding the perfect natural hint of smoke to our self-basting birds.
